Nous l\u2019avons rencontr\u00e9e pour parler de l\u2019impact de son titre, des atouts des vendanges nocturnes et de sa vision de l\u2019avenir du secteur viticole belge.<\/p><\/p>\n<\/div><\/div>\n\n\n\n

F\u00e9licitations pour ton titre, Kathy ! Qu\u2019est-ce que le fait d\u2019avoir remport\u00e9 le titre de Wine Lady of the Year a chang\u00e9 pour toi ?<\/h4>\n\n\n\n

Merci ! On m\u2019en parle \u00e9norm\u00e9ment. Au fond de moi, je l\u2019esp\u00e9rais, mais je n\u2019aurais jamais imagin\u00e9 gagner, et encore moins que cela aurait un tel impact. Pour un producteur, cette visibilit\u00e9 suppl\u00e9mentaire est fantastique. Nous le constatons imm\u00e9diatement : des restaurants nous contactent spontan\u00e9ment parce qu\u2019ils souhaitent inscrire Cruysem \u00e0 leur carte. Le timing est en plus id\u00e9al, car nous sommes en pleine phase de croissance et nos ventes augmentent fortement.<\/p>\n\n\n\n

Votre parcours est \u00e9tonnant : vous \u00eates pass\u00e9s du secteur de la construction \u00e0 la\r\nviticulture. Comment cette aventure a-t-elle commenc\u00e9 ?<\/h4>\n\n\n\n

Mon mari et moi dirigions une entreprise de chapes que nous avons vendue en 2015. Nous avons toujours \u00e9t\u00e9 passionn\u00e9s par le vin et le r\u00eave de poss\u00e9der un ch\u00e2teau en France ne nous quittait jamais. Lorsque nous avons fait analyser nos terres \u00e0 Kruisem, nous avons d\u00e9couvert qu\u2019elles \u00e9taient particuli\u00e8rement adapt\u00e9es \u00e0 la production de vins effervescents. En 2017, nous avons plant\u00e9 nos 3 000 premiers ceps, sans aucune exp\u00e9rience, mais avec une immense capacit\u00e9 de travail h\u00e9rit\u00e9e de notre pass\u00e9 dans la construction. Aujourd\u2019hui, notre domaine compte 48 000 ceps r\u00e9partis sur 10 hectares.<\/p>\n\n\n\n

Vous produisez exclusivement des vins effervescents. Quel est votre secret dans le vignoble ? <\/h4>\n\n\n\n

Nous r\u00e9alisons un maximum de travaux nous-m\u00eames et nous travaillons de mani\u00e8re tr\u00e8s efficace. Un \u00e9l\u00e9ment essentiel est la r\u00e9colte m\u00e9canique, que nous effectuons exclusivement de nuit. Pourquoi ? Parce que les raisins arrivent au chai bien frais, entre 8 et 12 \u00b0C. Cela permet de pr\u00e9server la fermet\u00e9 de la peau des baies et de limiter l\u2019oxydation, ce qui am\u00e9liore la qualit\u00e9 du jus. Apr\u00e8s les vendanges, le vin repose d\u2019abord sept \u00e0 neuf mois en cuve afin de gagner en stabilit\u00e9, puis il vieillit encore deux ans en cave.<\/p>\n\n\n\n

Tu es \u00e9galement tr\u00e9sori\u00e8re de Belbul. Quelle est l\u2019importance de cette organisation ? <\/h4>\n\n\n\n

Belbul est l\u2019association des producteurs belges de vins effervescents. Elle constitue un v\u00e9ritable label de qualit\u00e9 : pour en faire partie, les membres doivent produire un vin b\u00e9n\u00e9ficiant d\u2019une AOP (Appellation d\u2019Origine Prot\u00e9g\u00e9e), ce qui implique une analyse chimique et une d\u00e9gustation par un comit\u00e9 d\u2019experts. C\u2019est d\u2019ailleurs une belle co\u00efncidence que les trois derni\u00e8res Wine Ladies \u2013 Joyce, Vanessa et moi \u2013 soient toutes membres fondatrices de Belbul.<\/p>\n\n\n\n

Que r\u00e9serve l\u2019avenir au domaine viticole Cruysem ?<\/h4>\n\n\n\n

Notre priorit\u00e9 reste inchang\u00e9e : continuer \u00e0 faire rayonner les vins effervescents belges de qualit\u00e9 et montrer au grand public que la Belgique produit des cuv\u00e9es d\u2019un niveau exceptionnel. Cette ann\u00e9e, nous esp\u00e9rons engager pour la premi\u00e8re fois un collaborateur fixe afin de garantir cette qualit\u00e9 \u00e0 tous les niveaux, alors que nous nous dirigeons vers une production de 100 000 bouteilles par an.\r\n<\/p>\n\n\n\n

Nous souhaitons \u00e9galement d\u00e9velopper davantage l\u2019exp\u00e9rience propos\u00e9e au domaine. Lors de nos terrasses d\u2019\u00e9t\u00e9 et de nos journ\u00e9es de d\u00e9gustation, nous constatons que les visiteurs appr\u00e9cient \u00e9norm\u00e9ment l\u2019histoire personnelle qui se cache derri\u00e8re chaque bouteille. Qu\u2019il s\u2019agisse d\u2019un team building ou d\u2019un groupe priv\u00e9, nous voulons que chacun reparte avec le m\u00eame enthousiasme que nous pour les bulles belges. Nous continuerons \u00e0 faire ce qui nous passionne : garder les pieds dans la terre, la t\u00eate sur les \u00e9paules et construire, avec conviction, un produit belge de grande qualit\u00e9 dont nous pouvons \u00eatre fiers.<\/p>\n\n\n\n
