Qu\u2019est-ce qui vous a motiv\u00e9 \u00e0 continuer \u00e0 participer toutes ces ann\u00e9es ?<\/p><\/h4>\n\n<p class=\"wp-block-paragraph\">J\u2019ai toujours attendu avec impatience le d\u00e9fi suivant. Lorsque j\u2019ai particip\u00e9 pour la premi\u00e8re fois en 2020, je ne m\u2019attendais absolument pas \u00e0 devenir champion provincial. Ensuite, j\u2019ai voulu d\u00e9fendre ce titre, ce qui m\u2019a permis de remporter plusieurs titres provinciaux. Cette ambition m\u2019a toujours motiv\u00e9. En outre, le soutien de nos clients, de mes coll\u00e8gues et de mon entourage a \u00e9galement jou\u00e9 un r\u00f4le essentiel. Gr\u00e2ce \u00e0 leurs encouragements, j\u2019ai continu\u00e9 \u00e0 participer ann\u00e9e apr\u00e8s ann\u00e9e.&#013;\n<\/p>\n\n<h4 class=\"wp-block-heading\"><p class=\"p1\">Comment les personnes de votre entourage \u2013 coll\u00e8gues, clients, famille \u2013 ont-elles r\u00e9agi \u00e0 votre titre ?<\/p><\/h4>\n\n<p class=\"wp-block-paragraph\">J\u2019ai re\u00e7u \u00e9norm\u00e9ment de f\u00e9licitations. Les personnes qui me sont proches savent combien de travail, de pr\u00e9paration et de pers\u00e9v\u00e9rance cette r\u00e9ussite a demand\u00e9. Elles \u00e9taient donc avant tout heureuses de voir que j\u2019avais enfin atteint cet objectif.&#013;\n<\/p>\n\n<h4 class=\"wp-block-heading\">Le titre de \u00ab Sommelier of the Year \u00bb r\u00e9compense non seulement les connaissances en vin, mais aussi le service, l\u2019exp\u00e9rience offerte au client et la communication. Estimez-vous que cette approche refl\u00e8te correctement le m\u00e9tier ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Absolument. Pour moi, un sommelier est avant tout quelqu\u2019un qui veille \u00e0 ce que les clients repartent avec un beau souvenir. Pour y parvenir, il faut bien plus que de simples connaissances en vin. Il faut savoir comprendre les attentes des clients, \u00eatre \u00e0 l\u2019\u00e9coute de leurs envies et les traduire en un choix de vin appropri\u00e9. Il est \u00e9galement essentiel de raconter cette histoire de mani\u00e8re accessible et convaincante afin que le client ait pleinement confiance dans son choix.&#013;\n<\/p>\n\n<h4 class=\"wp-block-heading\">L\u2019\u00e9v\u00e9nement parle volontairement d\u2019\u00ab \u00e9lection \u00bb plut\u00f4t que de \u00ab concours \u00bb. Partagez-vous cette philosophie ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Tout \u00e0 fait. Au final, tous les participants partagent la m\u00eame passion pour le vin et l\u2019hospitalit\u00e9. Bien s\u00fbr, il n\u2019y a qu\u2019un seul vainqueur, mais pour moi, l\u2019essentiel est de rencontrer d\u2019autres sommeliers, d\u2019\u00e9changer des id\u00e9es et d\u2019apprendre les uns des autres. C\u2019est pr\u00e9cis\u00e9ment ce qui fait toute la valeur du Sommelier of the Year.&#013;\n<\/p>\n\n<h4 class=\"wp-block-heading\">Y a-t-il un vin inoubliable dans votre carri\u00e8re, une bouteille que vous n\u2019oublierez jamais ?<\/h4>\n\n<p class=\"wp-block-paragraph\">J\u2019accorde beaucoup d\u2019importance \u00e0 l\u2019histoire qui se cache derri\u00e8re un vin. Chaque bouteille qui porte une histoire particuli\u00e8re me marque. Si je devais n\u2019en retenir qu\u2019une, ce serait un Petrus de mon ann\u00e9e de naissance, 1996. Durant ma formation, ce vin \u00e9tait souvent cit\u00e9 comme l\u2019un des plus embl\u00e9matiques au monde. Avoir eu l\u2019occasion de travailler avec une telle bouteille, et qui plus est issue de mon ann\u00e9e de naissance, a \u00e9t\u00e9 un moment tr\u00e8s particulier que je n\u2019oublierai jamais.<\/p>\n\n<h4 class=\"wp-block-heading\">Selon vous, quelle est la plus grande id\u00e9e re\u00e7ue sur le m\u00e9tier de sommelier ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Beaucoup de personnes pensent que les sommeliers passent leur temps \u00e0 boire du vin. Apr\u00e8s ma victoire, j\u2019ai constat\u00e9 que beaucoup \u00e9taient surpris d\u2019apprendre qu\u2019en dehors du travail, je consomme volontairement tr\u00e8s peu d\u2019alcool. Le vin est sans aucun doute ma passion, mais pour moi, il s\u2019agit avant tout de le comprendre, de le vivre et de pouvoir partager son histoire. J\u2019accorde \u00e9galement beaucoup d\u2019importance au fait de consacrer du temps \u00e0 ma famille, \u00e0 mes amis et \u00e0 d\u2019autres centres d\u2019int\u00e9r\u00eat afin de pr\u00e9server un bon \u00e9quilibre.<\/p>\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><p class=\"p1\"><i>Vous n\u2019avez rien \u00e0 <\/i><i>perdre et tout \u00e0 gagner.<\/i><\/p><\/p>\n<\/blockquote>\n\n<h4 class=\"wp-block-heading\">Observez-vous dans votre restaurant un int\u00e9r\u00eat croissant des clients pour les alternatives sans alcool ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Oui, les clients ont aujourd\u2019hui une approche beaucoup plus r\u00e9fl\u00e9chie de la consommation d\u2019alcool. Nous constatons de plus en plus souvent qu\u2019ils alternent boissons alcoolis\u00e9es et boissons sans alcool au cours d\u2019un m\u00eame repas. Il n\u2019est pas rare non plus qu\u2019une personne opte pour un accord mets-vins tandis que l\u2019autre choisit un accord sans alcool. Cela montre que la demande de flexibilit\u00e9 et d\u2019alternatives de qualit\u00e9 ne cesse de cro\u00eetre.&#013;\n<\/p>\n\n<h4 class=\"wp-block-heading\">Que diriez-vous aux jeunes sommeliers qui h\u00e9sitent \u00e0 participer au Sommelier of the Year ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Je leur dirais de ne pas h\u00e9siter et de se lancer. Ils n\u2019ont rien \u00e0 perdre et \u00e9norm\u00e9ment \u00e0 gagner. C\u2019est une occasion unique de rencontrer d\u2019autres sommeliers, de trouver de nouvelles sources d\u2019inspiration et de d\u00e9velopper leur propre vision du m\u00e9tier. Chacun poss\u00e8de son propre style, et c\u2019est justement gr\u00e2ce \u00e0 cette diversit\u00e9 de points de vue que l\u2019on apprend \u00e9norm\u00e9ment, tant sur soi-m\u00eame que sur la profession.<\/p>\n\n<h4 class=\"wp-block-heading\">Que change concr\u00e8tement ce titre pour vous, sur le plan professionnel ou personnel ?<\/h4>\n\n<p class=\"wp-block-paragraph\">Ce titre repr\u00e9sente \u00e9norm\u00e9ment pour moi, d\u2019autant plus qu\u2019aucun sommelier de la r\u00e9gion de Louvain-Tirlemont n\u2019avait encore \u00e9t\u00e9 \u00e9lu Sommelier of the Year. Cette victoire a \u00e9galement suscit\u00e9 une importante couverture m\u00e9diatique. Elle me donne l\u2019occasion de partager ma vision du vin et de montrer qu\u2019il est bien plus accessible que beaucoup ne l\u2019imaginent. Le vin ne se r\u00e9sume pas \u00e0 la technique : il est avant tout une histoire de r\u00e9cits, de rencontres et d\u2019\u00e9motions.
